Directions:

1. Soak the cashews overnight in cold water or in boiling water for 1 hour. Drain the cashews.
2. Blend the water, cashews, coconut milk, and Cocoa Energize until smooth.
3. Freeze for 2–3 hours.
4. Sprinkle with cacao nibs, Pink Himalayan Salt, or your favorite toppings.
5. Freeze until solid (about 6 hours).
6. Allow the ice cream to thaw for 15–20 minutes before serving.
